Instructions for Immersion Blender (hand blender):
In a blender cup (I use the one that came with my immersion blender), combine the egg, Dijon mustard, fresh lemon juice, and oil and allow them to settle.
Using a stick blender, place it at the bottom of the cup, hold it flat, and blend on low speed to mix the ingredients thoroughly. You can gently move the blender up and down to ensure all the oil is incorporated.
It should take 1-2 minutes to come together into a creamy mayo texture.
