- Using a stick blender, place it at the bottom of the cup, hold it flat, and blend on low speed to mix the ingredients thoroughly. You can gently move the blender up and down to ensure all the oil is incorporated.
- It could take 1-2 minutes to come together into a creamy mayo texture, mine usually comes together in about 10 seconds.
A Few Notes on Homemade Mayo
Note about oil: Many recipes call for canola oil or vegetable oil, which are not usually regarded as healthy, even though they are considered neutral oils. I like to use Extra Virgin Olive Oil, even though it doesn’t have a neutral taste (it tastes a little bitter, but that’s what I like to use). Your personal preference will play a role here. You may also consider using grapeseed oil or avocado oil.
Broken mayo is where the emulsification of the oil stops and the mixture gets soupy rather than thick and creamy. I haven’t had this happen with an immersion blender, but if it does happen to you,ย hereย is an article you may find useful. One thing to be sure is that you have fresh ingredients and everything is at room temperature.
