How to Cook Winter Squash
- Preheat oven to 400°F
- Slice the squash in half
- Scoop out the seeds
- Drizzle some olive oil on the flesh side of the squash, optional
- Sprinkle with salt and pepper, optional
- Bake, flesh side down, on a baking sheet for 30-60 minutes (will depend on how thick the squash is)
- You can check for doneness by inserting a knife into the thickest part of the squash. If it slides in without much resistance, it’s done.
- Let the squash cool until you are able to handle it
- Scoop out the flesh and use as desired. I like to use mine in baked goods and soups, so I will store it as is and then make a puree when I’m ready to use it. You can also make a puree right away if you choose.
Note: If you want to cube the squash and keep its shape intact (more like a diced potato than a mashed potato), pull the squash out a little earlier. The resistance on the knife should help you gauge that.
